  • 3- 4 pound roast beef (pikes peak roast, chuck roast or rump roast)
  • Apple Cider
  • Brown Sugar
  • Granulated Garlic
  • Kosher Salt
  • Dry Mustard

How to Grill Apple Cider Roast Beef:

Prepare apple cider marinade and allow to cool to room temperature.

Use an injector and inject about half of  the marinade into the roast.

Place in a zip top baggie and pour remaining marinade over roast. Seal and place in refrigerator for 2 hours.

Prepare a grill fire to about 350° with hickory wood for smoke flavor.

Remove roast from marinade and place over indirect fire.

Cook with the lid closed until internal temperature reaches 150°, about 1 hour.

Remove from grill and wrap in foil. Return to the grill and continue to cook with the lid closed until internal temperature reaches 190°- 200°.
